RISOTTO DE FAVAS E ERVILHAS


Fazer um risotto não tem nada de especial. É tudo uma questão de fazer algumas vezes até apanhar o jeito. Esta receita serve de entrada, ou só por si de refeição. Mais uma vez usei as favas sem pele, e se precisarem de ver como se faz, espreitem aqui.

RECEITA PARA: 2 PESSOAS
TEMPO DE PREPARAÇÃO: 20 MIN

INGREDIENTES:
1 Chávena de Miolo de favas
1 Chávena de Ervilhas
1 cebola
2 Dentes de Alho
1 c.s. de Manteiga+1 c.s. de Manteiga
2 c.s. de Azeite
1 caldo de galinha
Água quente (aprox. 1/2L)
1/2 copo vinho branco
1 c.chá de açafrão em pó
Sal e pimenta q.b.
1 Ramo de Tomilho
1 chávena de arroz arborio
Parmesão ralado a gosto

PREPARAÇÃO:
Numa panela coloque 1/2 l de água, o açafrão e o caldo de galinha. Deixe ferver e reserve.
Num tacho coloque 1 colher de sopa de manteiga juntamente com o azeite. Junte a cebola e os dentes picados e deixe refogar uns 2 minutos.
Adicione o arroz e frite-o durante 1 minuto, mexendo ocasionalmente.
Junte o vinho branco, as favas, o tomilho e as ervilhas e deixe evaporar. Vá adicionando uma colher do caldo de cada vez, assim que o arroz começar a secar. Entre adições mexa ocasionalmente para ajudar a libertar o amido do arroz (não precisa de o fazer constantemente).
Tempere com sal e pimenta.
O arroz demora cerca de 13 a 15 minutos até ficar pronto, mas vá provando. O objetivo é que fique al-dente. Quando atingir este ponto, retire do lume, junte a restante manteiga e parmesão ralado (3 c.s.) e deixe tapado uns 2 minutos antes de servir.

BROAD BEANS AND PEAS RISOTTO

Make a risotto has nothing special to it. It's all a matter of doing a few times to get the hang of it . This recipe serves as an appetizer , or a meal itself, or even as a sidedish. Again I used the broad beans without skin, and if you need to see how it's done , take a peek here .

RECIPE FOR : 2 PEOPLE
PREPARATION TIME : 20 MIN

INGREDIENTS :
1 Cup of Peeled broad beans
1 cup of peas
1 onion
2 cloves of garlic
1 tbsp Butter +1 tbsp Butter
2 tbsp Olive Oil
1 Chicken broth cube (or 1/2L of the liquid one)
Hot water ( approx. 1/2L if you're using the chicken stock cube)
1/2 cup white wine
1 tsp turmeric powder
Salt and pepper
1 Bunch of Thyme
1 cup of arborio rice
Grated parmesan to taste

PREPARATION :
In a pan put 1/2 liter of water , the saffron and the chicken stock cube . Boil and set aside.
In a pan put 1 tablespoon of butter with the olive oil. Add the chopped onion and the cloves of garlic and sauté for 2 minutes .
Add the rice and fry for 1 minute, stirring occasionally .
Add the white wine, the borad beans, peas and also the thyme and let it evaporate. 
Keep adding a cup of broth at a time , as soon as the rice starts to dry. Between additions stir occasionally to help free the rice starch (no need to do constantly) .
Season with salt and pepper .
The rice takes about 13-15 minutes to get ready , but taste it . The goal is to be al-dente . 
When you reach this point , remove it from the heat , add the remaining butter and the grated parmesan ( about 3 tbsp ) and leave covered about 2 minutes before serving .
